The following two marinades are both easy to prepare and delicious to eat!
In a blender, combine 1 cup fresh orange juice, 3/4 cup fresh juice, 2 garlic cloves, the minced inner white bulb of 1 lemongrass stalk, 1/2 cup each of chopped cilantro and mint leaves and 1/4 cup fresh oregano. Puree until smooth. Season with kosher salt.
Makes about 2 cups.

In a medium bowl, whisk 1/2 cup each of soy sauce and honey with 3 Tbsp. Dijon mustard, 2 Tbsp. toasted sesame oil, 3 finely grated garlic cloves, 2 tsp. finely grated lemon zest and 1 peeled and finely grated 2-inch piece of ginger. Season with kosher salt and pepper.
Makes 1 1/4 cups
